Easy Baked Pumpkin Donuts
These Pumpkin Donuts are a super easy and warm Fall treat! They have a perfectly dense texture that sets them apart from fluffy, cakey baked donuts. They’re super moist and come together fast for a cozy morning breakfast or afternoon snack. Pair with a cup of coffee or warm cider and these will become a new family favorite!
Ingredients
- 210 g (1¾ cups) all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- 2 tsp ground cinnamon

- ½ tsp ground ginger
- ¼ tsp ground allspice
- ¼ tsp ground cloves
- ½ tsp salt

240 g (1 cup) canned pumpkin puree (Libby’s preferred)
- 57 g (½ stick/4 Tbsp) salted butter, melted
- 60 ml (¼ cup) vegetable oil
- 100 g (½ cup) granulated sugar
- 100 g (½ cup) light brown sugar
- 2 large eggs, room temperature
- 60 ml (¼ cup) whole milk, room temperature
- 1 tsp vanilla extract
- 56 g (½ stick/4 Tbsp) unsalted butter, melted
- ¼ tsp vanilla extract
- 100 g (½ cup) granulated sugar
- 2 tsp ground cinnamon

Pumpkin Donuts
Preheat the oven to 350°F. Grease two or three 6-count donut pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, allspice, cloves, and salt. Set aside.
- In a large bowl, whisk together the pumpkin puree, melted butter, vegetable oil, granulated sugar, brown sugar, eggs, milk, and vanilla extract vigorously for about 1 minute.
- Add the dry ingredients to the wet ingredients, whisking until combined and the batter thickens slightly.
- Spoon or pipe the batter into the donut pans, filling each cavity about ¾ full. Use a #24 cookie scoop (3 Tbsp) for each donut, though some pans may need up to ¼ cup (#16 cookie scoop / 4 Tbsp).
- Tap the pans on a towel-lined counter 10 times to even out the batter.
- Bake for 10-14 minutes, or until the donuts are golden and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the donuts cool in the pans for 5 minutes, then transfer them to a wire rack.
Sugar Spice Coating
In a small bowl, melt the butter and stir in the vanilla.
- In another bowl, combine the granulated sugar, cinnamon, nutmeg, and ginger.
- While the donuts are still warm, lightly brush them with or dip them in the melted vanilla-butter.
- Roll the donuts in the sugar-spice mixture until fully coated. Recoat if necessary.
- Serve warm or at room temperature. (These reheat well in the microwave!)
Notes
- Servings: This recipe makes about 12-18 donuts, depending on the size of your donut pan. We get 18 with our pan that holds 3 Tbsp in each cavity.
- Storage: These donuts are best eaten fresh but can be stored at room temperature for up to 2 days or in the refrigerator for up to 4 days. To prevent the sugar coating from getting soggy, loosely cover the donuts and avoid stacking them. Freeze uncoated donuts in an airtight container for up to 1 month.
- Pumpkin Puree: Use pure pumpkin puree, not pumpkin pie filling, which has added sugar and spices.
- Mixer: You can also use a hand or stand mixer in place of a whisk, just be careful not to overmix or the donuts will turn out too dense.
- Sugar Coating: You may have leftover sugar-spice mixture. Store it for up to a few months or use it in coffee, oatmeal, or on toast. We’ve tried decreasing the amount, but it’s always too hard to work with when dipping.
- Spices: You can substitute the donut spices with 2½ tsp pumpkin pie spice + 1 tsp cinnamon, but we recommend using the listed spices for optimal flavor and neighbor of the year award.
